A Stuffed Nose Can Kill Almost the Entire Taste of Food — Because "Taste" Is Mostly Smell
What we call "taste" is mostly smell, detected through the back of the throat — your tongue alone only picks up a handful of basic sensations.
Taste buds on the tongue actually detect only a few basic qualities: sweet, salty, sour, bitter, and umami.
All the rest of flavor's richness — strawberry, coffee, chocolate — comes from retronasal smell: aroma molecules that travel from your mouth up into your nose from the inside as you chew and swallow.
That's why food "tastes like nothing" when you have a cold — it's not that your tongue stops working, it's that your nose is blocked and your brain only gets half the signal.
A simple experiment proves it instantly: pinch your nose shut and eat a piece of apple, then a piece of onion — with your nose blocked, they're hard to tell apart, because without smell both give the tongue almost the same "taste."
